Easy Mexican Corn Dip Recipe

ingredients:

6 ears Fresh Sweet Corn, husks and silks removed, cut off the cob

1 large Red Onion, cut into chunky bite-sized pieces

1 Tbsp Garlic, chopped

1 (15-oz) can Black Beans, drained and rinsed

1 (4-ounce) can Fire-roasted Green Chiles, with liquid

1/3 cup Lime Juice (I prefer 2/3 cup)

1/3 cup Cilantro, finely chopped

1/3 cup Cotija cheese (I prefer 2/3 cup)

2 Avocados, diced

1 tsp Red Chili Flakes (optional)

8 Tbsp Olive Oil, divided

1/2 cup Unsalted Butter, diced into medium cubes

2 tsp Salt

2 tsp Ground Black Pepper

1) In a large skillet, heat 2 Tbsp olive oil on medium high heat and put in half of the corn. Once the corn starts to char and blister, remove from pan. It will be about 4-5 minutes. Repeat with the rest of the corn. Put in a large bowl.

2) In the same pan, add 2 tbsp of olive oil, the red onion and garlic and sauté for 2-3 minutes until charred. Place in the bowl with the corn.

3) Immediately add the butter cubes to the bowl and stir to combine so the butter cubes will melt.

4) Add the avocados, black beans, green chiles, lime juice, cilantro, salt, pepper, chili flakes, and stir to combine. Top with Cotija cheese.

5) Serve with lime wedges and tortilla chips.
